The best barbecue menu ideas from the forest this summer

The sun is shining, the bluebells have been and gone, and signs of summer are all around. Which means we've got one thing on our mind - summer barbecues.

If there is one thing we love about summer, it’s the barbecues. The sizzle of steak, the smoky aromas, and the eye-catching colours of a crunchy salad. Gas or coals, rain or shine, nothing stops us when it’s barbecue season - so much so we even have a National BBQ week from 28 May to 3 June 2018. The perfect opportunity to practise some recipes for your summer staycation!

Barbecued Cornish Mackerel Fillets

Cornwall is an ever-popular destination for a staycation due to its dramatic coastlines, wild moorlands and a growing food scene. There’s plenty of room for active couples in need of adventure, and families aiming for the perfect seaside holiday, and our Deerpark location makes the perfect base. Plus, it’s just a short hop to Looe, a busy fishing port where you can pick up fresh line-caught Cornish mackerel.

Garnish with lemon and pepper and bake on the barbecue for a delicious meal - can you beat fresh fish, eaten in the open air?

Hampshire Pork with Sage, Lemon & Prosciutto

Hampshire has plenty on offer for a summer break in the UK. There’s the south coast and the New Forest for a start, and our cabins at Blackwood Forest are a short train ride away from London if you’d like to mix city and country.

We’re also close to Winchester, which holds a spectacular farmers’ market twice monthly. Explore the 90 plus stalls and discover fresh produce from the region, making sure you pick up some of the local pork for your barbecue, and try this recipe for Pork with Sage, Lemon and Prosciutto.

Gloucester Old Spot Pork Chops with caramelised peaches, thyme and honey

If there’s one thing Gloucestershire is famous for, it’s delicious tender pork. It’s perfect for simple cooking, especially on the barbecue. Try this recipe for a flavour filled dish.

You’ll find all the fresh produce you need, including free range Gloucester Old Spot, in any of the farm shops near Forest of Dean - and it’s quick and easy to prepare this recipe after a day climbing Symonds Yat or exploring the mysteries of Clearwell Caves.

Beef short Ribs with Asian Marinade

One important ingredient for every barbecue is the 'perfick' marinade. We love this one from Norfolk butchers, Perfick Pork, for delicious beef ribs.

Summer in Norfolk is full of places to visit - from your base in Thorpe Forest you’re close to a traditional day at the seaside at Great Yarmouth, or a boat trip in the Norfolk Broads.

Barbecue pork steaks with apple and garlic

Sherwood Forest is most famous as the home of Robin Hood, who would have feasted on the foods he found in the forest. If your family would love to get a little closer to nature on your summer holiday, our Forest Ranger is on hand to demonstrate survival skills, and to teach you a little about foraging for food. Head into the local area and you’ll find lots of shops selling fresh, local produce. Find local pork and Bramley Apples for this delicious recipe.

Welsh Lamb Chops with Sticky BBQ sauce

With our new location in Beddgelert opening this summer, it’s the perfect opportunity to discover what a staycation in Wales is all about. The incredible scenery around Snowdonia, a wealth of activities for families from underground trampolining to mountain climbing, plenty of history and, of course, the tastiest Welsh lamb. After a day’s adventures, fire up the barbecue and cook these mouth-watering lamb chops with sticky BBQ sauce.

BBQ Scottish salmon with noodles

Avid fishing fans will know that there’s no tastier fish than one you catch yourself. Stay in our cabins at Strathyre and you’re perfectly placed for a spot of fishing on Loch Lubnaig (you will need a licence). If you don’t fancy catching your own, you’ll be able to find plenty of fresh-caught fish locally, for a treat of BBQ Scottish Salmon.
